Coconut Almond Butter Protein Bars (serves 4)

2 servings of whey protein isolate (chocolate or vanilla)
1 cup dried oats
1/2 cup liquid egg whites or 4 egg whites
1/2 cup unsweetened applesauce
1/4 teaspoon vanilla extract
2 tablespoons natural almond, hazelnut or cashew butter
2 tablespoons coconut shavings (unsweetened)

Preheat the oven to 350 degrees F. In a large glass bowl, mix together the eggs whites and dried oats. Add the applesauce, vanilla extract and nut butter and blend well. Spray a non-stick cooking spray in an small baking dish. Spread the mixture in an even layer, over the bottom of the dish. Sprinkle the coconut shavings on top. Bake for approximately 18 – 20 minutes, or until the edge starts to pull away from the sides of the dish. Remove from the oven, let cool and enjoy!
